Veracruz-Style Tilapia

  • 2 tablespoons olive oil
  • 1/2 onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 4 tomatoes, cut into small-sized cubes
  • 1 leaf bay
  • 1/2 tablespoons thyme
  • 2 Jalapeño chiles
  • 1/3 cups green olives, cut into round slices
  • 3 tablespoons capers
  • 1/4 cups white wine
  • 2 tilapia fillets
  • salt
  • pepper

  • In a skillet, heat oil over medium heat. Add onion and garlic and cook for a few minutes. Add tomato, bay leaf, thyme, and oregano. Cover and cook until tomato releases its juices.
  • Add Jalapeño chiles, green olives, capers, and white wine. Cook for 5 minutes until slightly reduced. Add tilapia fish, salt, and pepper. Spoon a bit of sauce over the tilapia fish and cover. Cook until cooked through.
  • Serve Veracruz-style tilapia on a plate with rice on the side.
